Old varieties with history
Onions have been an integral part of local cuisine for centuries – but many old varieties have fallen into oblivion over time. Ja! The selection includes Rouge de Genève, a flat, round onion with a dark red to purple colour. Its mildly spicy flavour loses its sharpness when cooked, making it ideal for classic, traditional cuisine. Ramata di Milano is round, medium-sized and characterised by its shiny red skin. It has a sweet, mild flavour with a delicate pungency and is particularly suitable for raw dishes and fresh salads. The banana shallot is often still difficult to find. It is larger than classic shallots, easy to peel and develops a delicate sweetness when cooked – perfect for sauces, dressings and stews.

In addition to their taste, onions also score highly from a nutritional point of view. They contain valuable sulphur compounds and antioxidants that support the immune system and can have a positive effect on the heart and circulation. ‘Onions were already a common household remedy for our grandparents – for colds or to boost strength, for example,’ says Klaudia Atzmüller, Managing Director of Ja!
